A Taste of Vacation

Is it me, or is this week seriously dragging? Maybe it’s because I worked on Monday, or maybe it’s just hard to get back into the swing of things after a week off. Either way, I am so ready for the weekend.

Another thing I’m ready for? A vacation. Somewhere warm, sunny, and on the beach. Preferably with a fancy cocktail in my hand and a good book.

But alas, I’m here in Boston, with temps in the 20s during the day and single digits at night. Oh, and I have a puppy that needs to pee every hour and a half. At least she’s speedy about it though. Honey, on the other hand, has to survey several blocks before choosing a suitable patch of grass. And heaven forbid anyone walks by, a car stops, or the wind changes direction. Then it’s all over and I’m guaranteed another twenty minutes of wandering the neighborhood.

You’d think all of this time freezing outside would steer me towards a warm beverage, but I just haven’t been able to get a tropical smoothie off my mind. Pineapple, orange, banana, and just a little avocado to create that perfectly creamy texture. This smoothie is like a little taste of vacation.

Tropical-Inspired Smoothie

Serves: 1-2
 

Ingredients
  • ½ C. Non-Dairy Milk (I used plain, unsweetened almond milk)
  • ¼ C. Pineapple Juice (or fresh/frozen pineapple)
  • 1 Banana (preferably frozen)
  • 1 Small Orange
  • ½ a Small Avocado
  • Juice of ½ a Lemon
  • Handful of Ice

Instructions
  1. Place all ingredients in blender and blend until smooth.
  2. Pour into a fancy glass and pretend you’re on vacation somewhere tropical.

 

And now I’m craving a hot chai latte…if only Starbucks would deliver.

Is it freezing where you are too? Anyone else feel like it should be Saturday (or at least Friday night) already?

I on the other hand wish it were colder were i live! our temperatures go from 30 to 49 F…I really would like to have some snow weather :D

I like snow from inside my warm apartment. Driving/walking through it is a different story. ;)

I feel you. I had my fill of fog living in San Francisco last year. I lived right on the cusp of where it’s foggy all.the.time. It definitely gets to you after a while. I seriously debated one of those SAD lamps. haha

It has been FREEZING down here in Maryland, but is supposed to be in the 50s this weekend- I am stoked! When I got out of work today, the sun was shining and my car said it was 45˚ but it felt much warmer!
I’m going to Florida next weekend to visit the in-laws and really hoping that it is unseasonably warm down there. And if I could swim while I’m down there, I would be in heaven…
Oh- and about the puppy peeing- remind me not to take having a fenced-in yard for granted. I didn’t when I got my guys and that was in late January- during that huge blizzard (or back to back blizzards, rather) 2 years ago! I don’t know how we survived. :)

It’s supposed to be high 40s in Boston this weekend – I can’t wait. Funny how 50 suddenly seems so warm in winter.

I would LOVE to have a fenced-in yard someday, or any yard for that matter. I’m very jealous!

I made a smoothie like this a couple of weeks ago and it does seriously taste like you’re on an island somewhere in the tropics :)
And yes, this week is seriously dragging. I woke up today wishing/hoping/praying it was Saturday with no such luck.

This week has been ridiculously long. Probably because my birthday is tomorrow so I’ve been anxious and excited. Oh well! It’s almost over.
I’ve had a serious craving for summertime foods lately so I’ve been eating fruit like crazy. But, this smoothie sounds delicious and would be a nice change. (:

The winter where I live is so bipolar. Tuesday was minus 12 celsius and today it is plus 8. I never know what to wear or do in advance.

Wow, that’s quite the range! It’s supposed to be in the low 50s in Boston tomorrow…so basically summer. ;)

I haven’t jumped on the green smoothie bandwagon yet but I’ve never seen avocado in a smoothie, I think I’d actually like that!

Awesome! The avocado flavor doesn’t really come through at all (just make sure to use a small amount!), but it adds a great texture to smoothies. I was also a little skeptical of the green smoothie trend, but you actually can’t even taste the spinach. And when in doubt, just add pb and banana. They’ll mask any spinach flavor. :)

all I can think of right now is taking a winter vacation to someplace tropical :( I don’t know how i’ll get through these next few months after so many holiday vacation days off from work! we are already planning our first winter vacation for next december.

I know what you mean. I think it’s key to have something planned to look forward to, even if it’s only a day trip or mini vacation. Fortunately, it’s at least been mild in Boston this weekend. I needed a break from the frigid temps!
