FYI, I used your oatmeal raisin cookie recipe tonight. I did make a couple of substitutions (avocado for Earth Balance and a mix of flax seed “egg” and homemade yogurt for the applesauce) but otherwise everything was the same and they are fantastic!
I’ll have to try the avocado instead of Earth Balance – what a genius idea!!! I’m so glad the cookies turned out!
Yes! Its my most favorite butter substitute. I’ve got picky eaters in my family, so I have to sneak veggies/fruits in where ever I can. I’m becoming a veggie sneaking ninja. I’ve used avocado in everything from bread to frosting…I’ve never had it go wrong.
And ALL those cookies were gone in, like, a few hours!
The granola looks fab!…already ordered from VitaCost (as per your recommendation) for the ingredients I was missing. Let ya know how it works out…We looove Granola with nut milk or a muffin topping or just straight from hand to mouth;D
I was really happy with Vitacost – low prices and free/fast shipping. It’s going to be trouble for me.

Made the granola this morning and to my hubby’s delight…he was starving after his workout and gobbled it down with some almond milk.
Mine turned out a little too golden brown but still yummy. I think next time I’ll just lower the oven temp to about 275 and bake for about 20 minutes or so and see what happens. I did happen to add some white chia seeds to up the nutrition even more. Love that it wasn’t super sweet.
Couldn’t help picking at it each time I walked while it was cooling;D

Thanks for letting me know how it turned out! It sounds like our oven temps vary a little – I have a suspicion mine may run cool, which could explain why your granola turned out a little too golden. I love that you added chia seeds – what a great addition!
