I love making soup in the crockpot – and with yesterday’s and today’s chilly temps, it is about time I dust that thing off and start {slow} cookin’!

I am so excited about slow-cooker weather! I have about 100 ideas in my head right now- and this cookbook would help with the “vegan experiment” that will be going on in my house. I’m so excited to make this pumpkin chili again (which can be made with or without meat): http://www.oatmealafterspinning.com/2011/10/09/apple-pickin-and-pumpkin-chili-2/

Before I moved across country, I had three slow cookers! While I was paring down my belongings, they all got the ax. Little did I know how much more could be done with them than making the animal-based recipes I’d witnessed growing up.

I have a slow cooker but since I’ve started cutting out meat I haven’t used it much. I’m guilty of thinking of it purely in terms of making pulled pork or chicken, chili, stews, etc. I forget there is a whole other world of slow cooker meals and desserts out there. This book sounds awesome and like it would inspire many creative uses of the slow cooker! Good giveaway!

I used to think it wasn’t for me because I don’t eat meat, but I’ve made some delicious things in there: applesauce, vegetarian stew (just the veggies, no beef!), and a really delicious 13 bean soup with lentils and tons of veggies. I’ve been wanting to try some desserts because I hear you can make some pretty dern good ones in that thing!

I have 3 crockpots and I used them constantly. My family loves to come home to the smell of dinner when we open the door, and as a diabetic, I love being able to have an easy way to prepare simple protein recipes. My mother is a vegetarian, and while my family is not, she has certainly convinced us to integrate more meatless meals into our diet.

Slow cookers rock. There is nothing better than coming home with the family after a day of fun, and smelling the food already cooked. Although thought of a winter cooking method, no harm in breaking it out all year round.

Chilis get a great amount of time to blend their flavors.
