If I had to pick just one frosting to enjoy for the rest of my life, it would probably be vegan cream cheese frosting (followed closely by lemon buttercream). That’s why a couple of years ago I finally set out to perfect my own homemade version. The only hiccup? It was surprisingly tricky.
I kept ending up with more of an icing than a frosting, which is still delicious, but I was going for fluffy and the ability to pile it high. Version #5 finally hit the mark, using a combination of vegan cream cheese and butter instead of all cream cheese. As a result, the frosting has a subtle buttery flavor that’s hard to resist, in addition to holding its shape so you can go equal amounts cake to frosting, if that’s your thing.
The beauty of this cream cheese frosting recipe is that it’s only 4 ingredients and it takes under 5 minutes to whip up. It’s awesome on vegan carrot cake cupcakes (duh), chocolate cake, and of course vanilla cake too. The cupcakes you see in the photos are my easy vegan funfetti cupcakes, minus the sprinkles mixed into the batter. I brought them to our first big neighborhood potluck that Aaron and I attended over the weekend, and based on our neighbors’ feedback, I’d say we made a pretty sweet first impression!
- ⅓ cup vegan cream cheese (pour off any liquid on top before measuring)
- ⅓ cup vegan butter
- 2 cups organic powdered sugar, sifted
- ¾ teaspoon pure vanilla extract
- Add the vegan cream cheese and butter to a large mixing bowl. Use an electric hand or stand mixer to beat the cream cheese and butter until combined, then mix in ½ cup of sifted powdered sugar at a time. Beat until smooth and creamy, then stir in the vanilla.
It's critical that you make sure to pour off any liquid from the top of your cream cheese before measuring because the extra liquid can make your frosting too thin.
Most vegan butters already contain salt. If the brand you're using does not, mix in a generous pinch.
If you find that the frosting is too soft after you mix it, pop it in the fridge for 5 minutes to firm up.
