7 Stress-Free Vegan Thanksgiving Recipes

Stuffed Butternut Squash with Quinoa Salad | picklesnhoney.com #butternut #squash #quinoa #salad #recipe #fall #thanksgiving

We are just over a week out from Thanksgiving. Are you ready for it? Fall didn’t hit me until the end of October this year, when the weather started dipping below freezing at night (too soon!) and I suddenly realized with my entire being that it was definitely not summer anymore. Not surprisingly, Thanksgiving is sneaking up on me too, which is why I’ll be keeping it extra low-key. Here are 7 of my favorite vegan Thanksgiving recipes that are all about keeping life easy and stress-free…

Sweet Potato Salad with Tempeh & Maple Mustard Dressing | picklesnhoney.com #salad #vegan #sweetpotato #tempeh #lunch #dinner #recipe

My go-to salad for guests? Sweet Potato Salad with Tempeh and Maple Mustard Dressing (it’s always a crowd-pleaser).

20-Minute Creamy Vegan Brussels Sprout Coleslaw (with Maple Mustard Vinaigrette) | picklesnhoney.com #brusselssprouts #coleslaw #vegan #glutenfree #side #recipe

I love brussels sprouts and this 20-minute Creamy Vegan Brussels Sprouts Coleslaw is simple, fresh, and totally crave-worthy. Feel free to add chickpeas for extra protein!

Simple Vegan Sweet Potato Biscuits | picklesnhoney.com

Doughy biscuits hot out of the oven are magic, and these Simple Sweet Potato Biscuits couldn’t be any easier. Smother them in (vegan) butter or my 5-minute homemade gravy.

Freezer-Friendly Pumpkin Soup (Vegan & Gluten-Free) | picklesnhoney.com

Freezer-Friendly Pumpkin Soup. Roast veggies, combine with a handful of ingredients, serve (or freeze and defrost later, if you’d like to tackle some of your holiday cooking in advance). Butternut squash or sweet potato would be delicious here.

10 Minute Stovetop Apple Crisp (Vegan, Gluten-Free, Refined Sugar-Free) | www.picklesnhoney.com #vegan #applecrisp #apple #dessert #snack #recipe #glutenfree

I say let someone else bake the pumpkin and pecan pies this year. 😉 This 10-Minute Stovetop Apple Crisp is vegan, gluten-free, refined sugar-free, and 100% delicious. Serve it with a big scoop of vanilla ice cream (creamy cashew or coconut milk gets my vote).

Perfect timing! I’m finalizing my Thanksgiving menu and I’m in need of something that everyone can (and will) eat. Your stuffed butternut squash fits the bill! 🙂

    1. Awesome! It makes for a really pretty centerpiece, and obviously it tastes delicious too. 😉

These all sound delicious, Amanda! I know it’s still early but I am already planning to make your vegan gingerbread cookies the day after Thanksgiving. I made them for Christmas last year and my family requested them again! I’m thinking I’ll make them more than once this year.

    1. Oh, I LOVE those cookies! They’re based off a recipe that Aaron’s mom has been making for years. I think making them more than once this season is the way to go for sure. 🙂
