Gravy is a holiday thing for me. I usually only make it a couple of times a year, around Thanksgiving and Christmas. Is it the same for you, or do you serve it year-round?

I thought about getting all fancy with caramelized onions and mushrooms, but there’s something appealing about having a gravy recipe that’s a cinch to pull together and that also lends itself to whatever dishes you may be serving it with (like my favorite mock mashed potatoes…those are so good, and good for you too). Also, the holidays, aka gravy season for me, tend to be a busier time of the year with longer stretches of the days spent in the kitchen. I’m a big believer that food should be nourishing, physically and emotionally. Keeping things simple is a good way to keep stress levels low. Because really, who needs to be stressing over a gravy recipe? Or any recipe for that matter.

Cook Time: 5 mins

The easiest vegan gravy you may ever make. 7 ingredients, a little salt and pepper, and 5 minutes. Good gravy doesn't need to be complicated.

Ingredients

  • 1/4 cup whole wheat pastry flour (I like sorghum flour for a gluten-free option)
  • 2 tablespoons extra virgin olive oil
  • 2 cups homemade vegetable stock
  • 1 tablespoon nutritional yeast
  • 1 tablespoon low-sodium tamari
  • 1/2 teaspoon dried thyme, crushed
  • 1/2 teaspoon garlic powder
  • sea salt and black pepper, to taste

Cuisine: Gluten Free, Vegan Servings: 2 cups

Cook Time: 5 mins

Instructions

  • Heat a medium saucepan over low-medium heat. Add the flour and extra virgin olive oil and stir to combine. The texture will be thick and sand-like.
  • Add the vegetable stock and nutritional yeast and whisk until smooth.
  • Turn the heat up to medium-high, then whisk in the tamari, thyme, and garlic powder and bring to a boil.
  • Reduce the heat to low and continue stirring until thickened (1-2 more minutes). Season with salt and pepper to taste.
